Show me a person who has spare time to think about vegan or healthy food in all this craziness?Almost nobody, and my job is to show you, that it can be super simple if you know HOW!
Food = Fuel … No fuel = No energy!
Sooner or later, we realize the importance of eating well(btw. we already know). Without the right food = right fuel for our bodies, we don’t have the energy to do the things that are important for us!We all have been there and maybe still are – but please know that it’s OK!
I truly believe, that food is the first thing we need to pay attention tobefore focusing on anything else on our THRIVE journeys such as fixing relationships, gym sign-up, choosing meditation course… One step at the time, no more failures!
Let me share with you that is is possible to eat well(vegan if you are) on your busy THRIVE journey,even if you feel like having no time at all! This recipe is a great example showing, that all you need is a bit of willingness, good quality ingredients, and 3 minutes!
It took me a while to nail the consistencybut eventually, I did!
I have tried chia seeds from many different brands, and I must say that I have been quite surprised to see that not all of the chia seeds soaked the same amount of liquid. Once again, it shows how important is to focus on the quality of the food we eat!
A some point, even my mom gave upon making chia pudding. She used to get disappointed because the chia seeds she bought at the supermarket just didn’t soak and then she ended up with a lot of liquid instead of pudding with ‘gelly’ chia seeds. Now, both of us are getting chia seeds from Vitalvibe, where I had my 6 months internship in 2016 – try it and let me know if you experienced any difference⭐︎
No more talking (haha, I could keep going) and let’s make the pudding!
Small bowl, Spoon, Scale (optional)
Gluten-free, RAW, Vegan, No artificial sugar, Soy-free, Corn-free
- Measure 45g | 3 tbsp of chia seeds and put it into a small bowl together with 1⁄2 tsp of gingerbread spice.
- Add 240ml | 1 cup of your homemade almond milk, 1 tbsp of honey OR 2 tbsp of coconut nectar and mix well.
- Before eating, set aside for at least 10 minutes to allow the chia seeds soak. Stir occasionally.
- Serve with mulberries or fresh berries… yaaay!
☆ CHIA SEEDS & GINGERBREAD SPICE: We are mixing these two ingredients together because we want to avoid the gingerbread spice forming lumps. It would happen if we would add it to the mixture at the end.
☆ CONSISTENCY: The consistency of the pudding depends on the thickness of the milk (fat %); as well as on the quality of the chia seeds you are using. You need to test it and find out what consistency you like. If the pudding is too thick, then add more milk or water. If it’s too runny then add more chia seeds.
☆ HONEY or COCONUT NECTAR: I eat only creamed honey from my cousin, but if you are going for a vegan version then go for coconut nectar. Coconut nectar doesn’t spike your blood sugar because it is dried coconut nectar; not the sugar we know. My grandma with diabetes uses it as well!
☆ BEST RESULTS: Make your gingerbread-chia porridge before going to bed. Mix it well and store it in the fridge. The chia seeds will soak well and you will make it easier for your body to digest because the seeds will be fully soaked.
